Lemon Garlic Chicken Thighs

This recipe is so easy, it's really a non recipe, but I hope it reminds you how you can throw together a chicken dinner in no time and without very many ingredients.  This recipe goes well with Roasted Lemon Potatoes and a side of pita bread and a cucumber salad.

Serves 4

Ingredients

  • 1/2 cup olive oil
  • Juice of one lemon
  • 3 garlic cloves, minced
  • 1 teaspoon oregano
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 8 boneless, skinless chicken thighs (or you can use breasts)

Directions

In a large bowl, whisk together everything except the chicken.  You can also pour the ingredients into a large Ziplock bag instead.  Add the chicken and coat thoroughly.  Refrigerate for 30 minutes.

Meanwhile, either heat a grill pan on your stovetop or light the grill outside.  Grill the chicken on medium-high heat until done, about 5 minutes per side.

Note:You can use chicken on the bone and/or with skin, but then you will need to cook longer.
