Flourless Almond Cookies
Many of my friends are going gluten free or dairy free so I made these cookies in their honor. Easy and delicious, these lack no flavor from the missing wheat or milk.
Ingredients
2 cups finely ground almond flour (I use Bob's)
2/3 cup sugar
Zest of one orange
2 teaspoons vanilla extract
1 teaspoon almond extract
1/4 teaspoon salt
1/2 teaspoon cinnamon
1 egg
More sugar for rolling
Loose almonds
Directions
Preheat oven to 375 F. In a bowl, combine all of the ingredients and mix thoroughly using a wooden or plastic spoon. When it comes together, you will have a sticky dough. With wet hands, form dough into balls and then roll them in sugar. Place each ball on a parchment lined baking sheet and press an almond into each one. Bake for 20 minutes.
Optional: add 1/2 teaspoon of your favorite jam into the thumbprint and under the almond.
