Spinach Cheese Squares

My mom used to make these when I was younger and I would devour them.  I updated them a little bit to include more veggies and different cheeses.

Ingredients:

  • 3 eggs
  • 1 cup milk
  • 1 cup flour
  • 1 teaspoon baking powder
  •  pinch of freshly grated nutmeg
  • 2 1/2 cups shredded mild cheddar cheese
  • 1/2 cup grated Parmiggiano Reggiano or Asiago cheese
  • 1/2 white onion, minced (about 1/2 cup)
  • 2 cups cooked spinach, cooked, chopped and wrung dry
  • 1/2 cup chopped zucchini
  • Salt and Pepper
  • Optional: pinch of cayenne

Directions:

Grease a 9x13 inch baking pan or spray with cooking spray. Preheat oven to 350 degrees F.

In a large bowl, whisk the eggs together and then add the milk and whisk.  Stir in the flour, nutmeg and baking powder.  Add cheese, onion, spinach, zucchini and salt and pepper. Pour into baking dish and bake for 30 minutes.
