Miso Soup
Want a delicious soup in 10 minutes? With back to school here and the very many nightly activities that go along with it, I find myself struggling to get dinner on the table before 9pm. Last night I whipped together Miso Soup in 10 minutes. Granted, it's not very authentic, but it did the trick:
Ingredients:
1 tablespoon white miso paste
3 cups chicken stock (can use veg)
Couple of dashes of soy sauce
1 cup cubed firm tofu
1/4 cup sliced scallions
optional: spinach, seaweed and/or cooked mushrooms
Instructions:
In a saucepot, combine miso paste, stock and soy sauce and heat until miso is dissolved. Add tofu and other ingredients and heat until cooked through, about 5-7 minutes. You can also add rice noodles for a heartier dish.
