Pea Hummus
This snack couldn’t be easier and really has nothing to do with Hummus other than the texture. Inspired by something I had at Pret A Manger, where they also make a version with beets.
Ingredients
1 bag of frozen peas, defrosted
1 clove garlic, chopped
Juice of 1/2 of a lemon
1/3 cup extra virgin olive oil
Salt and pepper to taste
Directions
Whizz the peas, garlic and lemon juice in a blender and while going, drizzle in the evoo so the dip emulsifies nicely. Add in the salt and pepper to taste. Serve with pretzels, crackers or cut up veggies.
