Stuffed Mushrooms

You can stuff mushrooms with just about anything. These are vegetarian.

Ingredients

  • 4 large stuffing mushrooms

  • 1 clove garlic, peeled and chopped

  • 1/4 white onion, chopped fine

  • 1/2 cup broccoli florets, shredded

  • 4 sundried tomatoes in oil, chopped

  • 1/2 cup panko breadcrumbs

  • optional for non vegetarians: cooked bacon, chopped, shredded cheese

Directions

Preheat oven to 350 degrees F.

Remove stems from mushrooms and clean caps and stems. Brush caps with olive oil and bake, open side down, for 10 minutes. Remove and flip over.
Meanwhile chop the stems fine and sauté in olive oil over medium heat with the onion, garlic and broccoli until cooked through, about 5-7 minutes. Add other ingredients and cook a few minutes more. Adjust for taste with salt and pepper.

Stuff the caps with the mixture and drizzle with olive oil. Bake 15 minutes. Serve hot
