Radicchio Endive Salad

This salad is a perfect balance of bitter and sweet

I created this salad by tossing some of my favorite flavors in a bowl and it just came together naturally. The bitter radicchio is balanced by the sweet red onion and oranges.

Ingredients

  • 1 head radicchio, cored and chopped

  • 1 head Belgian endive, cored and chopped

  • 1/4 red onion, sliced

  • 1/4 cup quartered artichoke hearts in oil

  • 1 navel orange, peeled and sliced, pith removed

  • 1/4 cup toasted almonds

  • 1/2 tablespoon oregano, dried

  • olive oil and white balsamic vinegar

  • salt and pepper

Directions:

Wash and dry the lettuces and toss in a bowl with the onion, artichoke hearts, orange, almonds and oregano. Whisk the oil and vinegar together in a small bowl and then toss with the radicchio mix. Season with salt and pepper to taste.
