Pickled Onions

These are so easy to make and enhance salads, sandwiches, burgers and more. I suggest making a batch and keeping them on hand.

Ingredients

  • 2 red onions, cut in half and thinly sliced

  • 2 cloves garlic, peeled

  • 2 cups Apple cider vinegar (White is okay too)

  • 1 cup water

  • 1/3 cup sugar

  • 2 tablespoons salt

Directions

Place the onions and garlic in a sealable jar. In a small saucepan, heat the vinegar and water and add the sugar and salt. Stir until dissolved. Let cool slightly then pour into the jar until the onions are covered. If you need more liquid, add water. Tightly close the jar and stick in the fridge for at least 30 minutes. The longer you leave, the better.

Note: you can use this concept to pickle other things like carrots or cauliflower, but I would pre-cook tougher vegetables first.
