Walnut Cake
I was inspired to make this cake after reading a very simple Almond Cake recipe from Julia Child. I love the idea of an uncomplicated cake that isn’t so white flour heavy. This cake is seriously addictive!
Ingredients
1/3 cup all purpose flour, sifted
3/4 cup finely ground walnuts (I used a food processor)
1 stick salted butter, softened
2 tsps vanilla extract
2 tsp almond extract
3 eggs
3/4 cup sugar
1/2 tsp baking soda
pinch salt
Directions
Preheat oven to 350 degrees F.
Prepare a round cake pan by either buttering and sprinkling with flour, by using shortening instead of butter or lining with parchment paper.
Cream the butter with the flours and baking powder. Add the extracts and salt. Separately beat the eggs until satiny and add the sugar. Fold the eggs with the butter and flour mixture until thoroughly combined. Spread into pan and bake for 30 minutes. Let cool in the pan for 10 min tires then run a butter knife around the sides and carefully tap out to cool on a rack. Sprinkle with confectioner’s sugar and serve.
Optional: add orange zest to the batter or make a cream cheese frosting.
