Flatbreads

Flatbreads are so easy to make and the toppings are endless. You can spread olive tapenade, tomato sauce and burrata, pesto and parm, hummus or just a drizzle of olive oil and herbs

Ingredients

  • 1 teaspoon active dry or instant yeast

  • 1 teaspoon granulated sugar

  • 3/4 cup warm water

  • 2 cups 000 or all-purpose flour

  • 1 tablespoon olive oil

  • 1 teaspoon salt

Directions

Mix the yeast, sugar and water together in a small bowl and set aside until frothy, about 5 minutes. In a larger bowl, mix the flour, oil, salt and yeast mixture with a wooden spoon until it comes together, then turn out onto a floured counter and knead for about 5 minutes until a smooth ball of dough forms. Put in a clean bowl and drizzle with a bit more olive oil and turn over. Cover with a clean kitchen towel or plastic wrap and tuck in a corner of your counter where it is warm. Let is rise for about 45 minutes to one hour. Once risen, punch dough down and turn out onto the counter. Cut into two pieces and roll out into two rectangular pieces. Cover with towel and let rise again, this time for 15 minutes.

Preheat the oven to 400 degrees F. Place your breads onto a pizza stone or a parchment lined baking sheet. Poke the dough flat with your fingertips. At this point you can brush with olive oil and sprinkle with herbs or bake plain for 15 minute minutes. Once baked, add toppings such as tomato sauce and burrata or pesto and parm- stick back into the oven just until the cheese melts.
