Easy Peasy Soup
I have never, ever liked Pea Soup, but that’s because the soup I grew up with was army green and reminded me of the scene from The Exorcist when Regan vomits all over her mother. This is not that soup.
Ingredients
Olive oil
1 white onion, chopped
2 cloves garlic, chopped
2 bags of frozen sweet peas
4 cups chicken or vegetable stock
Salt and pepper
Optional garnishes: crispy bacon, pancetta or prosciutto, fresh mint leaves, creme fraiche or toasted pepitas
Instructions
Saute onions and garlic in oil until soft. Add peas and stock and simmer for 5 minutes. Blend with an immersion blender until smooth. Adjust to taste with salt and pepper. Serve hot.
