Pasta Aglio e Oglio

You can use any pasta for this dish which could not be easier to whip up. Here’s a video of me making it (recipe below):

Ingredients

  • Extra virgin olive oil

  • 3 cloves garlic, chopped

  • large pinch of red pepper flakes

  • 2 anchovy fillets or 2 teaspoons anchovy paste

  • 1 pound pasta, typically spaghetti but any pasta will do

  • 1 cup grated cheese or breadcrumbs (your choice)

  • Salt and pepper

Instructions

Boil the pasta in salted water until al dente. Save 1 cup water after draining.

Saute garlic in the olive oil and add the red pepper flakes. Add the anchovies and mash around with your spoon, breaking it up so it melts into the oil. Add the pasta and fold together, off heat. Add the water, 1/2 cup at a time as you don’t want it too soupy. Add the cheese, salt and pepper and toss well. Serve hot.

If using breadcrumbs, toast bread crumbs in a skillet in olive oil and sprinkle on top
