Radicchio and Endive Salad
I love both radicchio and endive and sometimes will add arugula, regular lettuce or other greens to balance out the bitterness. If you want to turn this into a more substantial meal, you can add al dente cooked orecchiette pasta.
Ingredients
1 head radicchio, cored, chopped and washed
2 heads endive, washed and chopped and ends removed
1/2 thinly sliced red onion
Extra virgin olive oil
White Balsamic vinegar
1 tablespoon orange marmalade
1 teaspoon Dijon mustard
1 clove minced garlic
1 teaspoon oregano
salt and pepper
Optional: shaved parmiggiano reggiano cheese curls, arugula, escarole, slivered almonds
Instructions
Add greens to a large bowl. In a separately bowl, wish the remaining ingredients and toss with the greens. Adjust salt and pepper to taste.
