Pasta with Mushrooms, Spinach and Sweet Green Sauce

Ingredients

  • 1 pound pasta

  • 1/3 cup + 2 tbsp raw cashews

  • 1/4 cup olive oil

  • 3 tbsp filtered water

  • 2 tbsp rice vinegar

  • 2 tbsp tamari or soy sauce

  • 2 tbsp nutritional yeast

  • 1 tbsp pure maple syrup

  • 1 tbsp sesame oil

  • Juice of 1 lime

  • 2 garlic cloves, minced

  • 2 tsp ginger, minced or grated

  • 1 tsp siracha

  • Sea salt, to taste

  • 1/2 onion, chopped

  • 2 cloves garlic, chopped

  • 1 pound spinach (fresh or 10 oz frozen)

  • 2 cups mushrooms, sliced

  • Salt and pepper

Directions

Place a pot of salted water on the stove for the pasta and cook til al dente.

Meanwhile, put all of the ingredients up to the onion into a blender and whiz until smooth. Set dressing aside.

Saute onion on medium heat until translucent. Add garlic and mushrooms and saute until mushrooms are fully cooked and soft. Add spinach until wilted.

Drain the pasta and toss with the veggies and enough sauce to coat. Adjust to taste with salt and pepper.
