Balsamic Onions

I love the smell of onions roasted in the kitchen and cippolini onions are sweet enough to make an excellent side dish. Tossed with Balsamic vinegar takes them to another level. This dish is also super easy and makes a good side for roasted meats and fish or just with a salad and bread!

Ingredients

  • 5-6 cippolini onions or 2-3 small Vidalias

  • olive oil

  • good Balsamic vinegar

  • salt and pepper

  • rosemary (optional)

Directions

Preheat oven to 400 degrees F. Remove skins from onions and trim off stem ends. If using larger onions, quarter them. Toss in a bowl with the other ingredients and spread out on a parchment lined baking sheet or a glass pie or casserole dish. Roast for about 30 minutes, tossing once or twice during the roasting period.
