Romesco sauce
This simple sauce is a perfect addition to grilled meats, fish or for dipping with veggies. It's not the authentic way to make it, as the Catalans use bread and I don't, but it is delicious and takes 3 seconds to make.
Ingredients
1 jar roasted red peppers, about 1 cup
1/2 cup blanched almonds
1 cloves garlic, peeled and loosely chopped
pinch salt and pepper
1 teaspoon smoked paprika
1 tablespoon saba or balsamic glaze or vinegar
1/3 cup olive oil
Directions
Add all ingredients to the blender or food processor except the oil. Drizzle in the oil and whizz away until fully blended and smooth. Serve over meats, fish or as a dip.
