Crispy Roasted Potatoes
In an earlier post, I shared my recipe for Lemon Potatoes , which are reminiscent of Greek diner potatoes. Here is another recipe which I find can be used for any kind of potato, including red new potatoes, creamers and sweet potatoes. These make a great side dish for any meat or fish. Depending on your theme, you can vary the seasoning by either using simple salt and pepper, chopped rosemary or a spicy flavor like smoked paprika.
Ingredients
1 pound potatoes of your choice. If a small potato, you can just rinse them and use as is. If a larger potato, you can peel unless it has a thin skin like a creamer does, and cut into 1-2 inch cubes
olive oil
salt and pepper
1/2 lemon
seasoning of choice, including smoked paprika, chopped rosemary, dried thyme or a seasoned salt (if you use seasoned salt, don’t add other salt)
Directions
Preheat your oven to 375 degrees F. Toss potatoes with olive oil and spread evenly on a baking sheet lined with parchment paper (not essential, but it helps keep your pans clean). Sprinkle with salt and pepper and other seasoning and stir.
Roast in the oven until crispy, stirring a few times. This will take around 30 minutes. Remove from oven and taste and adjust for salt seasoning. Squeeze a lemon over the potatoes and toss. Serve hot
