Chopped Salad
There are so many iterations of a Chopped Salad so feel free to add in other fresh veggies that you may wish to include. This one merged together some of my favorite ingredients including olives, lemon zest and fennel. If my dad were eating this, he’d want me to add anchovies as well. Not a bad idea.
Ingredients
1 bulb fennel, cleaned and chopped (bulb only)
1/2 red onion, sliced thin
3 stalks celery, sliced
1 cup cherry tomatoes, cut in half
4 radishes, sliced thin
Zest of one lemon
2 tablespoons capers (if in salt, make sure to rinse)
1/2 cup green olives, sliced in half
1/4 cup good olive oil
1/8 - 1/4 cup sherry vinegar (red wine vinegar or white balsamic works well too)
Salt and pepper
Directions
Mix everything together in a bowl up to the olives. In a separate bowl, whisk the olive oil and vinegar- use as much vinegar as you prefer. Toss dressing with veggies and add salt and pepper to taste. If you don’t serve right away, refrigerate and toss well when you do serve.
